1 lb of Striped Bass fillets (remove the bloodline) and skin
juice of three lemons
juice of three limes
one medium red onion, thinly sliced
2 tomatoes chopped
1 clove of garlic, minced
1 hot pepper, chopped fine
Chopped Fresh cilantro
salt and fresh black pepper to taste

Cut fish into 1/8 inch pieces and place on a platter. Place the thinly sliced onions on the fish. Then add the remaining ingredients, covering with the juices. Place in refrigerator for at least 3 hours before serving. Serve with ritz Crackers or saltlines
