View Full Version : Eating these fish?....How tasty?
Hello everyone,
Ok, Now that we fisherman have a forum to chat, I would love to get everyones thoughts on which fish is more tasty.
For example, I love fluke because it doesn't have that "Game" taste or fishy taste. I only fish for species that I eat and so far that's been Stripe bass,Flounder and fluke. I tasted blue fish years ago and found it to be "Fishy"
So....How does Porgies taste? Can you fillet them into strips like fluke? If blackfish taste good...how come i never see it on menus?

I agree Lou. Fluke, flounder and cod are may favorite eating fish.
Porgies (sand porgies) are also a good tasting fish. Whole or split I think is better. You can fillet them but you loose much in the process.
Small blues are good eating. It's the larger ones that taste gamey.
As the joke goes:
- Nail big bluefish to a wood board.
- Hang board on tree for 3 days.
- Remove big bluefish and eat board.

Sea Bass an Blackfish are probably the two best in he ocean...otherwise why would they have such a high price $$ on their heads!:!:

Try soaking the bluefish in milk overnight and then cook-ummm good

I guess you don't see them on the menu because of the difficulty in catching them. Try an upscale Asian resturant, there is a very lucrative live fish market and these fish are certainly included.
Small bluefish 1-2 lbs on a BBQ are excellent. I cook my fish whole without the heads ( for the wifey) so there isn't too much waste and they're jucier. S-bass, I steak'em out and BBQ, the best. Flounder when we use to get them were fryied in butter/oil combination.

It used to be Seabass was THE fish served in chineses restaurants. Steamed with soy sauce and sprinkled with scallions and garlic. Now they only serve blackfish, not because of taste but supply. They can't get 5 lb seabass regularly. I find seabass meat more succulent.

Just go to any good chinese eatery with a live fish tank ...Blackfish ,seabass, fluke and flounder . havent seen porgy on the menu but ive eaten afew fried with black bean sauce..

Tomyee- You're right. The fish of choice in most chinese restaurants is seabass. The preferred size was around 3lbs.
It was made, steamed, Hunan style or sweet and sour. If you have ever eaten it in any of those 3 ways, you would swear you were in fish heaven.who has recipes :)

We ate the bass last night. I made a BBQ sauce consisting of olive oil, dijon mustard, and lemon juice. I brushed the steaks prior to putting them on the grill and turning the every so often and brushing them some more, nobody complained.

Mudman- I was looking for some Chinese recipes for Seabass,BUT that recipe for Striped Bass looks great. Going to give it a shot next I cook the bass.

You guys got me to thinking, so I typed in crispy seabass in google's search engine and that was a big mistake. Now I have a big hankering for it. There were places and recipes for it. The only link for NY was http://www.njdiningguide.com/jvillage1b.html

I have an old cantonese recipe. Poached seabass( or black fish) with scallion and brown soy sauce.my favorite!
gut ,scale and cut off the fins. ( I like the head on)
boil a pot of water with a slice of ginger (pot must be big enough for the fish to float with out touching the sides .
while the water is boiling turn off the heat.
put the bass in the pot 10min per lb.
carefull take the fish out and place it on a large plate.
In a sauce pan heat up 1/2 cup of peanut oil till its smoking.
than pour it on the fish careful this will sear the skin of the fish.
chop up some scallions and drop them on the fish , than pour on about 3/4 cup of brown soy sauce .... time to eat....

Artie's South Shore Fish Market and Rest. is the best in the world. if you sawe the shallow water bucktailing for fluke show then you saw artie and the great place he has. Since we only eat fish we catch in my house. this is the ONLY restaraunt we go to now...unbelievable and they make whole crispy sea bass, fluke or blackfish and yellowtail snapper in the summer.!!

I'm reading all these ideas, recipes, restaurants etc. My mouth is salivating. Now if some one can come with an idea on how to catch the seabass already cooked.:beer:
